The Lemon Sole experiment was a resounding success. Accompanied with Jersey’s and Asparagus this delightful little flat fish was a dream. Having had a similar dish from the one and only 2009 Masterchef winner Matt Follas last year at his “The Wild Garlic” venture I was curious as to whether it could be repeated by aspiring Toni. Toni has never cooked this before but all credit to her, she rose the occasion. The Sole was brought locally, Dennis Knight from Rock if anyone goes near Wadebridge.
The Sole was trimmed, gutted and grilled with sliced lemon and butter for 10 minutes. A Beurre Noisette topped the fish. Wow. Thank you Toni for yet another fish endeavour.
